Moretum: the ancient Roman cheese spread "not for the faint of heart"

Brave friend Susan and I made moretum, based on an ancient recipe, for the appetiser course at a dinner. I was just about recovered enough to enjoy the meal, and I'd like to think this appetiser helped me with the rest of the recovery.
It's a garlic cheese spread that must be another form of ambrosia, if you don't mind your ambrosia roughing you up a bit. It's also easy to make, just a lot of grinding and mixing if you don't have a food processor.
